Ingredients (Makes 1 Serving)
2 corn tortillas
1 cup lettuce
1/2 cup black beans
6 oz chicken breast
1/2 cup onion
1/4 avocado
1/2 tbsp olive oil
1/4 cup parsley
Chipotle seasoning, salt, and pepper

Directions:
Prepare the Chicken: Season the chicken breast with chipotle seasoning, salt, and pepper. Cook in a skillet with 1/2 tbsp olive oil until fully cooked and golden brown. cut into cubes.
Cook the Black Beans: In the same skillet used for the chicken, heat the black beans until warm. Season with salt and pepper to taste. Finish off with parsley after turning off the heat.
Assemble the Tacos: On each corn tortilla, layer lettuce, black beans, chicken, onions, and slices of avocado.
Garnish: cut up some lime wedges on the side.
