Besides enjoying strawberries as they are, I love adding them to salads for a refreshing twist. This Mediterranean diet salad combines the crispness of endive and radicchio with the juicy sweetness of strawberries, creating a delightful and nutritious dish.

Ingredients (Makes 1 Serving)

  • 2 cups endive and radicchio, chopped

  • 1 cup strawberries, sliced

  • 1/2 small shallot, thinly sliced

  • 1/4 cup pistachios, chopped

  • 1/4 avocado, sliced

  • About 1/4 cup goat cheese, crumbled

  • 1 tbsp balsamic vinegar

  • 1/2 tbsp honey

  • Salt and pepper to taste

Directions:


  1. Prepare the Ingredients: Slice the strawberries and shallots. Chop the endive and radicchio.
