Another great thing about this recipe is that you can easily mix and match the vegetables you use. Bell peppers, onions, and mushrooms are all classic kebab ingredients, but you could also try zucchini, summer squash, or cherry tomatoes.

Ingredients (Makes 4 Servings):



  • 1 lb top sirloin steak

  • 1 lb mushrooms

  • 4 bell peppers (mixed colors)

  • 1 onion

  • Marinade:

    • 2 tablespoons extra virgin olive oil

    • 1 teaspoon thyme

    • 1 teaspoon black pepper

    • 1 teaspoon cumin

    • 1 teaspoon sumac

    • 1 teaspoon cardamom

    • 1 teaspoon coriander

    • 1 teaspoon paprika (or you can use a pre-made kebab spice blend)

Directions

  1. Prepare the Marinade: In a bowl, mix the extra virgin olive oil, thyme, black pepper, cumin, sumac, cardamom, coriander, and paprika.

  2. Marinate the Steak: Cut the top sirloin steak into cubes. Place the steak cubes in the marinade, ensuring they are well-coated.  Let them marinate for at least 1 hour (overnight for best results).

  3. Prepare the Vegetables: Cut bell peppers, and onion into squares. I like to leave the mushrooms whole but feel free to cut them if you want.

  4. Assemble the Skewers: Alternate the marinated steak cubes with the vegetables on skewers.

  5. Grill the Kebabs: Preheat the grill to medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally, until the steak reaches desired doneness.
