Ingredients:


Mediterranean Diet Stuffed Mushrooms with Artichokes Hearts



  • 1 box (8 oz) whole white mushrooms

  • 1 cup artichoke hearts

  • 1 1/2 Tbs low-fat cream cheese

  • 1/2 cup low-fat shredded mozzarella cheese

  • For garnish: 1 Tbsp shredded Parmesan cheese and

  • 1 Tbsp chopped parsley.








Directions:

  1. Preheat your oven to 375°F (190°C).

  2. Clean the mushrooms and remove their stems. Dice the stems and set aside.

  3. In a bowl, combine the diced mushroom stems, artichoke hearts, low-fat cream cheese, and shredded mozzarella cheese.

  4. Stuff each mushroom cap with the filling mixture.

  5. Place the stuffed mushrooms on a baking sheet.

  6. Sprinkle with shredded Parmesan cheese.

  7. Bake for 15-20 minutes or until the mushrooms are tender.

  8. Garnish with chopped parsley before serving.
