Ingredients:

2 6oz White Fish fillets

1 Tbsp Olive oil

4 corn tortillas


For the Seasoning Rub:

1 garlic clove, minced

1 tsp paprika

1 tsp cayenne pepper

1 tsp cumin

1 tsp oregano

1 tsp salt

1 tsp black pepper


For the Toppings:

3/4 cup red cabbage, shredded

1/4 cup pickled onions

1/2 cup carrots, julienned


For the Sauce:

1/2 cup low-fat sour cream

1-2 chipotle peppers in adobo

1 Tbsp lime juice

Salt and pepper to taste



Directions:


Blackening the Fish:

In a small bowl, mix together the ingredients for the seasoning rub: minced garlic, paprika, cayenne pepper, cumin, oregano, salt, and black pepper.

Rub the seasoning onto both sides of the white fish fillets.

In a skillet, heat olive oil over medium-high heat. Cook the fish for 3-4 minutes per side, or until it easily flakes with a fork.


Making the Chipotle Sauce:

In a blender or food processor, combine low-fat sour cream, chipotle peppers in adobo, lime juice, salt, and pepper. Blend until smooth.


Assembling the Tacos:

Warm the corn tortillas.
